Einstein Activity Capture (EAC)

Short answer

Einstein Activity Capture (EAC) automatically syncs emails and calendar events between Salesforce and Gmail or Microsoft 365, and shows them on related records. It is replacing Lightning Sync, and it now uses Microsoft Graph for Outlook as Microsoft retires Exchange Web Services (EWS).

Einstein Activity Capture (EAC) explained

EAC connects each user's mailbox and calendar and adds activity to the timeline of matching contacts, accounts and opportunities. By default, captured emails are stored outside the core Salesforce database, which means they do not appear in standard reports unless you configure logging to Salesforce records. Sharing settings control who can see captured activity.

With Lightning Sync being retired, firms that relied on it need to plan a move to EAC and check what their reporting and compliance archiving depend on.
